There is a lot of texture going on in this salad. Using wheat berries, lima beans, broccoli, celery and kale create a wonderful arrangement of crunch and flavor. I am not a huge fan of lima beans but I really like them in this
2 cups wheat berries
1 medium red onion, diced
10 oz. frozen lima beans
2 bunches broccoli, cut in small florets
3 stalks celery, diced
1 small tomato, finely diced
10.5 oz cherry tomatoes, halved
4 large kale leaves, finely shredded
2 cloves garlic, minced
1 can vegetable stock
2 T. Dijon mustard
1 t. basil
Pinch of crushed red pepper flakes
½ t. salt
Trader Joe’s Everyday Seasoning, to taste
Rinse and cook wheat berries according to package directions. Drain excess water and rinse with cold water. Place in a large serving bowl.
Using a large non stick skillet, slightly wilt the kale leaves then place in serving bowl with wheat berries.
Add the red onion, lima beans, broccoli with about ¼ can of vegetable stock in skillet. Cook until the veggies are slightly soft and the broccoli and lima beans turn a bright green. Remove from skillet and place in bowl with the kale & wheat berries then add cherry tomatoes and mix well.
Whisk the Dijon mustard, garlic, basil, red pepper flakes, diced tomato, salt, everyday seasoning and remaining vegetable stock in the skillet until well blended over low heat for approximately 1 to 2 minutes. Pour over salad and stir well. Serve immediately or chill first and then serve.
