This was a quick and easy dish we had for supper tonight. It literally took no more than 20 minutes to put together. My husband Joe came up with the name of the dish. Hope you like it.
1 package whole wheat angel hair pasta
1 small red onion, sliced thinly
1 8 oz. pkg. sliced mushrooms
1 red pepper, sliced thinly
½ t. + ¼ t. salt
¼ t. ground pepper
3 large cloves minced garlic
2 cups chopped tomatoes
½ t. dried basil
Good quality balsamic vinegar
Cook pasta according to package directions.
In a large skillet sauté the onion, mushrooms and red pepper in ½ cup of water for approximately 4 to 5 minutes until the onion starts to caramelize. Add the 2 cloves of garlic, ½ t. of salt and pepper and continue to cook until done.
While the veggies and pasta are cooking chop tomatoes and stir in basil and one clove of garlic and ¼ t. salt. Set aside.
In a pasta serving bowl, spoon the veggies over the angel hair pasta and top with the tomatoes. Drizzle balsamic vinegar on top of pasta and serve.
