My friend Sue shared this recipe with my husband and I for dinner last night. This dish is beautiful, delicious and very satisfying. It was very enjoyable to share with good friends.
Prep 10 min + cooking time 15-20
serves 6 (I cut most ingredients in half and it worked)
2 c frozen peas and carrots
4 cups cauliflower
2 cans chick peas drained and rinsed
1 med onion chopped
3 garlic cloves minced
2 1/2 t curry powder
3/4 t ground coriander
1/4 t crushed red pepper flakes
1 c vegetable broth
3/4 c coconut milk
1/4 c chopped fresh basil
3/4 t salt
2 T corn starch and 1 T water ( note: you can also use arrow root powder)
1 c dry couscous (opt)
In a large pan cook stir fry the first 5 ingredients. Add the spices and liquids. Cook until crisp tender (8-10 minutes). Add the corn starch and water combination to boiling mixture and stir to thicken. Prepare couscous according to package directions.
