Quick Potato Casserole

This is a quick and easy casserole that smells delicious.  The only time it takes is the baking of the potatoes.  Choose nice ripe potatoes with no green on them.  You can also just use baking potatoes that are peeled and diced.

Ingredients

1 ½ - 2 lbs of baby Dutch or new potatoes, quartered
½ red onion thinly sliced
1 28 oz. can fire roasted tomatoes
1 8 oz. pkg. whole mushrooms
2 cups fresh spinach
1 cup fat free Italian dressing
½ cup seasoned Panko bread crumbs

Instructions

Preheat the oven to 400 degrees.

Combine the potatoes, onion, mushrooms, spinach, fire roasted tomatoes and Italian dressing.  Mix well so everything is coated with the

liquid.

Pour into a round casserole dish and sprinkle with the Panko bread crumbs.

Bake in the oven for 1 hour 15 minutes until the potatoes are done.
