I named this Power Chili because this recipe is filled with a bounty of healthy ingredients…black beans, red lentils, acorn squash, mushrooms, onions, tomatoes, jalapenos and kale! Super delicious chili and healthy too!
1 large onion, diced
8 oz. button mushrooms, sliced
8 oz. baby bellas, sliced
2 cups acorn squash, diced
1 lb. black beans, soaked
1 ½ cups red lentils
1 box Pomi, chopped tomatoes
1 box Pomi strained tomatoes
1 box of water (use Pomi box)
32 oz. unsalted vegetable stock
4 cloves garlic
1 chopped jalapeno
3 t. chili powder
2 t. cumin
½ t. chipotle powder
½ t. black pepper
Salt to taste
½ bunch kale, finely chopped
Soak beans according to package directions. Drain and rinse beans after they are soaked.
Using a large stock pot add the onion and mushrooms then sauté over medium high heat without stirring for about 4 to 5 minutes. The mushrooms and onions should start to brown and caramelize.
Next add the acorn squash, jalapeno, garlic, black beans, red lentils, chopped tomatoes, strained tomatoes, water, vegetable stock, chili powder, cumin, chipotle powder and salt in with the mushrooms and onions. Bring to boil then reduce heat to low and cover for approximately 1 ½ hours, stirring occasionally.
Twenty minutes or so before serving, add the kale.
