Some friends gave us some pears from their pear tree. I didn’t want them to go to waste so I thought I would try something different with them and cook them with onions and kale. This was absolutely delicious!
1 medium red onion, thinly sliced
6 pears, cored and peeled, thinly sliced
2 T. chopped dates
1 T. champagne vinegar
Pinch of dried rosemary
1 bunch kale, trimmed and chopped
Salt & Pepper to taste
Place onions in a large skillet over medium high heat. Stir after 5 minutes when the onions have started to caramelize. Continue cooking until all of the onions are thoroughly cooked then remove from the skillet in a separate bowl.
Add the pears, dates and champagne vinegar in the same skillet that the onions were in and cook over medium high heat. The dates will break down in the cooking process and form a nice glaze with the vinegar to coat the pears. Cook for several minutes then add the rosemary and cook an additional minute or so. Remove from heat and place in same bowl as the onions.
Next add the kale to the skillet with a couple of tablespoons of water. Cook over medium high heat until the kale begins to wilt. Add the pears and onions on top of the kale and mix well. Salt and pepper to taste then serve in a serving bowl.
