Orzo is wonderful pasta to use when you want a lighter meal. It also works very nicely with wheat berries.
1 pkg. whole wheat orzo
1 ½ cups of wheat berries
½ small head cauliflower cut in florets
1 bunch broccoli cut in florets
½ small red onion, diced
2 cups halved grape or cherry tomatoes
2 cloves garlic
1 t. dried oregano
3 T. white balsamic vinegar
2 T. Dijon mustard
1 T. honey
Salt & pepper to taste
Prepare the orzo and wheat berries according to package directions.
In a small mixing bowl whisk together the balsamic vinegar, garlic, oregano, Dijon mustard and honey. Set aside.
In a large salad bowl combine, orzo, wheat berries, cauliflower, broccoli, red onion and cherry tomatoes. Pour vinaigrette over the salad and mix well. Serve with fresh grapes and whole wheat baguette.
