This recipe came from my brother in-law Jim’s mother. She brought this to every family get together. If you like it zesty you add more vinegar, if not use more water.
2 lbs. green beans, sliced diagonally about ½” size
1 red onion, diced
2 large handfuls of fresh parsley, chopped
3 T. sugar
2 parts vinegar
1 part water
Slice the green beans on a 1/2" diagonal cut. Place green beans in boiling salted water. Boil green beans approximately 8 minutes, or until desired tenderness. Remove green beans with slotted spoon into an ice water bath.
Place beans, onion, fresh parsley, vinegar, sugar and water in a bowl. Stir well and adjust vinegar and sugar to desired taste.
Serve chilled
