Cauliflower is the perfect compliment with kale and golden raisins. This is a delicious salad you could serve for any luncheon or entrée for dinner.
2 bunches lacinato kale
1 small head cauliflower cut in bite size florets
2/3 cup water
½ cup golden raisins
½ cup toasted slivered almonds
3 oz. capers, drained
Pinch of oregano
Pinch of red pepper flakes
1 lemon juiced
¼ cup water
2 T. honey
Salt & pepper to taste
Clean the kale then remove the stem and cut in bite size pieces. In a large skillet place kale and cook over medium high heat until kale slightly wilts. Place in a large serving bowl.
Add the cauliflower and water to the skillet and steam over medium high heat with the lid on until soften. Add the raisins, capers and red pepper flakes. Cook an additional couple of minutes. Remove from the skillet and add to serving bowl with
kale.
In a small mixing bowl add lemon juice, ¼ cup water, honey and salt & pepper. Whisk well and toss over salad.
Place salad on salad plate and garnish with a sprinkle of toasted almonds and serve.
