This is my favorite appetizer, and the entire family loves it as well. The traditional bruschetta has oil and parmesan cheese, but you will see there is plenty of flavor without either one.
3 large tomatoes, diced
2 large cloves of garlic
½ t. salt
3 large basil leaves, sliced or ½ t. dried basil
1 baguette, sliced and toasted
In metal bowl, add tomatoes, garlic, salt and basil. Let tomato mixture sit for about 15 minutes for flavors to come together.
Toast sliced baguette in oven or on grill about 3 to 5 min. each side.
Top bread with a generous spoonful of tomato mixture and enjoy!
