Broccoli Rice Salad

I discovered whole grain red rice at Whole Foods.  When cooked, it is the most beautiful rice ever.  The hint of curry along with the sweet grapes, cranberries and crunch from the broccoli and almonds makes this the perfect summer salad to share with friends and family alike.  I found the dressing also at Whole Foods.

Ingredients

1 ½ cups whole grain red rice
½ t. curry powder
1 ½ cup shredded carrots
½ red onion, diced
1 cup red grapes, halved
1 cup green grapes, halved
2 bunches broccoli, cut in small florets
3 stalks celery, finely diced
1/3 cup dried cranberries
2/3 cup slivered almonds, toasted
1 cup Snapdragon, Pineapple Chili oil free vinaigrette

Instructions

Place whole grain red rice and curry powder in rice cooker with 2 ½ cups water.  Cook until done.

Add cooked rice into a large bowl with shredded carrots, red onion, grapes, broccoli, celery, and vinaigrette.  Mix well and stir in the toasted slivered almonds.

Season the salad with salt and pepper.  Serve either as an entrée or a side.
