I made this along with the vegan St. Patrick’s Day feast. The purple and green is super colorful and festive looking.
1 head green cabbage
1 head purple cabbage
1/2 box vegetable stock
1 t. salt
1 t. onion powder
5 cloves garlic, minced
Fresh cracked pepper blend
2 sprigs fresh dill
Preheat oven to 400 degrees.
Clean outer leaves of cabbage and then cut cabbage into about 6 wedges. Place in a large baking dish by alternating green and purple wedges.
In a large glass measuring cup, whisk together the vegetable stock, salt, onion powder and garlic. Pour over the cabbage. Sprinkle with cracked pepper.
Cover with heavy duty foil and bake for 1 hour. Remove from oven. Break apart the dill and place on top of cabbage. Cover with foil and bake another 20 minutes.
