Grilling veggies is easy and makes a wonderful entrée. Each time I make these the recipe varies, I use whatever I have. I especially like pineapple added if I have in the kitchen.
1 pint cherry tomatoes
1 large onion quartered
1 red pepper, cut in chunks
1 green pepper, cut in chunks
1 yellow pepper, cut in chunks
1 pineapple cut in chunks
1 zucchini
Assemble randomly veggies and fruit on large soaked (soak the skewer so they won’t burn) wooden skewer. Grill thoroughly until edges of veggies start to brown. Marinate with your favorite fat free dressing.
