I had this salad at the Bread Garden Market in Iowa City. The flavors are fantastic and fresh along with some nice textures from the different ingredients.
½ head cauliflower cut in tiny florets
2 bunches broccoli, cut in tiny florets
1 pkg. baby kale, sliced thinly
½ bunch kale, sliced thinly
2 large handfuls fresh parsley, chopped
2/3 cup dried cranberries
½ cup toasted pumpkin seeds
2 lemons, juiced
1 clove garlic
Place natural pumpkin seeds in a dry skillet and toast over medium heat until they begin to brown and pop. Remove from skillet to cool.
Place broccoli in a medium size bowl. Pour boiling water over the broccoli and drain once it turns bright green. This happens rather quickly. Drain water and rinse with ice cold water then drain.
Place broccoli, cauliflower, baby kale, kale, fresh parsley and cranberries in a large salad bowl with lid. Mix well.
Mix lemon juice and garlic together. Pour over salad and mix well.
Sprinkle the pumpkin seeds on top of salad, mix again and serve.
