Rice Salad

This salad was basically made from ingredients in my pantry, other than the olives.  This is a super easy and very tasty salad.  This is a great salad to serve on a hot summer day.

Ingredients

1½ cups brown basmati rice
3 oz. wild rice, cooked
1 red onion, chopped
1 cup pitted kalamata olives
1 cup sundried tomatoes, julienned
4 medium tomatoes, diced
1 jar artichoke hearts, packed in water, drained
2 – 15 oz. cans garbanzo beans, drained
1 lemon, juiced
2/3 bottle of Fat Free Italian Dressing

Instructions

Prepare brown basmati rice in rice cooker with 2 ½ cups of water.  Cook the wild rice according to package directions while other rice is cooking.

Chop red onion and dice the

tomatoes.

In a large bowl combine the cooked brown and basmati rice, red onion, kalamata olives, tomatoes, sundried tomatoes, artichoke hearts, garbanzo beans, lemon juice and Italian dressing.  Season with cracked pepper.  Mix well and chill.  Serve on salad plate or pasta bowl.
